 Cinnamon Swirl Banana Bread


I hate banana bread!   But my mom made this and I loved it!  Then she told me it was banana bread!  I was a little bit mad, but it was so cinnamony sugary I couldn't taste the bananas and I will eat more even if it does have bananas in it, because it was SO GOOD!!!!!
 
For the bread:
  • 3 over-ripe bananas, smashed up
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • dash of salt
  • 1 1/2 cups flour
For the swirl:
  • 1/3 cup sugar
  • 1 Tbs cinnamon
  1. Preheat oven to 350.
  2. Butter and flour a loaf pan.
  3. Mix bananas, butter, sugar, egg, and vanilla together. 
  4. In a separate bowl combine flour, baking soda and salt.
  5. Gently stir in flour to wet mixture. Be careful not to over-mix!
FOR THE SWIRL:
  1. In a small dish, mix together the sugar and cinnamon.
  2. Add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
  3. Bake for 50-60 minutes FOR A LARGE LOAF or 30 minutes for a small loaf.
